#MeatlessMonday: Baked Falafel

It’s dinnertime on the first day of the week, so you know what that means! Meatless Monday is a great way to reduce your carbon footprint and improve your health if you’re not about fully committing to a vegetarian diet. For future Mondays, we’ll have a full day of meatless meals for you, but to get started we’re focusing on dinner!

Falafel is by far my favorite vegetarian meal, and this recipe is great since it is baked rather than the traditional fried style.   1. I made falafels two nights ago! I did not bake mine, though. I tried frying them, but in the end… they just fell apart. They were still tasty! I’ll try this recipie next time.
